Easy Tomato Sauce

Super simple tomato sauce.


  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 56 ounces of whole tomatoes, blended
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • pinch of red pepper flake
  • salt & pepper to taste
  • sugar to taste


In a large pot, bring water to a boil. Add fresh tomatoes with stems removed. Boil for several minutes until skin begins to separate. Remove tomatoes and let cool for 5 minutes. Remove skins and blend yielding 56 ounces of tomato liquid. NOTE: You don’t have to blend, if you prefer your sauce chunky, chop tomatoes yielding 56 ounces of tomato liquid.

In a large pot, heat the oil over medium heat. Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook for 2 minutes longer. Add the tomato liquid, tomato paste, oregano, bay leaf, red pepper flake and cook, uncovered, stirring occasionally, until thickened, about 30 minutes. Season with salt, pepper and sugar, to taste.
